Fresh Apple Cake with Browned-Butter Frosting

Fresh Apple Cake

With the apples so abundant this time of year, this Southern Living recipe kept calling me to give it a try. It did not disappoint.  A real winner!!!!  Everyone that tasted this apple cake seems to love it.  Click here for Printer Friendly Recipe.


This is what you will need
Toast the pecans
While pecans are toasting mix the melted butter, sugar, eggs and vanilla
Combine all dry ingredients
Then mix the dry ingredients with the butter and sugar mixture.  Mix well. 
Add apples to batter.  This batter is very thick, almost like a dough.  Very hard to get apples to mix.
Spread batter in a 13 x 9 pan and put in 350 degree oven
Bake for 45 minutes or until a wooden pick inserted in center comes out clean.  Very tempted to pick those baked apples out of the cake, but I didn't.  The smell is heavenly!!!

Now on to the 
Browned-Butter Frosting

Cook the butter in a heavy sauce pan
stirring constantly
until butter begins to turn golden brown
Pour browned butter into a small bowl.  Cover and chill until butter begins to solidify.
Beat butter and gradually add powdered sugar and milk.
When well blended add vanilla
Now is the time to adorn this cake with the Browned-Butter Frosting
Completely cover the cake with all the icing.  Go ahead you can lick your fingers. It is so so good!
Now decorate the top with those toasted pecans.
Oh Boy just what I have been waiting for--
a piece of this moist and delicious cake!!

This is a perfect fall dessert. In the words of my friend Kathi, "This is delish."
